Stems are the isolated song-length elements that make up a mix. They are usually exported out of a DAW as groups of corresponding tracks like drums, vocals, synths, etc. Stem mastering gives the mastering engineer a greater level of control over the sound if the project requires it.

Stem mastering and mixing might seem similar but are actually two distinct processes. Mixing involves adjusting the sonic characteristics of all the individual elements of a mix, of which there can be hundreds. Stem mastering involves working with a handful of song-length tracks that have previously undergone processing but need some subtle tweaking to be just right.
